Organic is not exactly a bakery: at their headquarters in suburban Reykjavik, they actually run an organic/health food store, selling local and imported products, but on the side, they make their own "nutritious" cakes, which they sell on-site and at select stores and supermarkets in the capital area. Coming in sealed plastic containers, they come in a few flavours (date, nutty, and chocolate are perhaps the easiest way to categorize them) and cater to quite a few special dietary needs; they're organic, they're raw, vegan, gluten- and lactose-free and you're welcome to add your own applicable words. They do, however, contain nuts.
For the rest of us, all these labels might not sound so appealing; I mean, the first thought for me had to be: well, if it has nothing, how can it taste good? The idea behind these cakes is: simple, nutrient-packed ingredients used to make something surprisingly complex, rich, and flavourful. The cake variety I tried and chose every time I was offered one (courtesy of that wonderful cake conspirator who keeps popping up) was the "Draumafreisting" (something along the lines of 'dream's temptation'; 490kr, if I recall correctly, at supermarkets): dates, almonds, coconut oil, agave, cocoa, maca root, sea salt, vanilla. "Nothing else." The end result: a chewy, chunky, somewhat brownie-like dough with nuts and a hint of sweetness; add to that an amazingly creamy and rich icing that you can't believe contains no butter. Flavourful, complex, and great texture. Perhaps the appellation "cake" isn't the best way to describe it, but this was a fantastic square and, although not particularly fancy, the best "raw cake" I've tried.
